I can't select the Multiplexed Video & Audio option.

You can only do multiplexing with MPEG Audio enabled. Make sure you have selected
MPEG audio as your audio file format.

PCM audio muxing is not possible.  There is no standard defined for multiplexing
PCM audio and MPEG video together.
